Halibut with Mango Salsa

I have been feeling the cooking bug this week for some reason. I made a few unique dishes over the course of the week that might have been nice to post, but I have been too crunched for time to snap photos and make a blog entry. Today was a little different. I went to my parents’ house with the kids and realized they were both going to be working for the next several hours. This was the perfect opportunity to prepare dinner for them and to give my cooking fiend mom a night off.

I decided to take a stab at cooking up some fish with a mango salsa. The kids were really into it as my daughter loves mangoes and my son wanted to eat fish since he is on some kind of health mission lately. We gathered our supplies from the store as well as the backyard garden and prepped the dinner with some shrimp jambalaya and garden salad. I must say the fish was light and delicious! The salsa got rave reviews by everyone at dinner and I will definitely make it again. This is a great light dinner item for a hot summer evening. Here is the recipe I used:

Fish Marinade                     Mango Salsa

1/2 cup orange juice                       3 cups of chopped mango

3 Tbsp olive oil                                 1/3 cup diced, sweet red pepper

3 Tbsp key lime juice                    1/3 cup diced red onion

2 Tbsp Brown Sugar                      1 diced jalapeño pepper

1 tsp lime zest                                    3 Tbsp orange juice

2 cloves garlic (crushed)              1 Tbsp cilantro, minced

3/4 tsp salt                                         3 tsp lime juice

6 halibut or mahi mahi steaks    1/2 tsp salt

Directions:

Combine all of the fish marinade ingredients in a bowl. Reserve about 1/3 cup of the marinade to baste the fish during cooking. Add the rest to a large ziplock bag and add the fish steaks to it. Marinate for a few hours. Combine all the salsa ingredients into a suitable bowl and mix. Refrigerate until ready to use.

Salt and pepper , then grill or broil the fish steaks. Heat about 5 minutes on each side while basting every couple of minutes with the reserved marinade. Top with the mango salsa and enjoy!
