Happy 4th of July with Four Cheese Star Ravioli

I want to wish everyone in the USA a happy 4th of July with cute photos from our lunch today.

Last week, Costco had these star shaped ravioli, colored with red, white and blue. They were so cute that we decided to grab some. We also thought that they would be a fun way to start today’s celebrations or at least add our own touch to them.

The ravioli were filled with four cheeses: Mozzarella, Parmesan, Ricotta and white Cheddar.  So we decided to eat them on a bed of pesto. It complemented them well. I make my own pesto, I will post the recipe, but you can buy some from a store. Although I think that the store bought pesto is never as good.

You can use a blender or a food processor to make it, it is really easy and fast to make and it freezes well. The recipe yields about two cups. You can easily double it or triple it for freezing.

Recipe for Pesto

 Ingredients:

  •  2 cups fresh basil leaves
  • 3 cloves garlic
  • ½ cup olive oil
  • ½ cup pine nuts
  • ¼ cup parmesan cheese
  • Salt to taste

 Directions:

  1. Combine all ingredients in a blender or food processor and blend to a fine consistency. Toss lightly with pasta.
  2. Sprinkle with Parmesan cheese as desired.
