This post has taken me a while to write, my sincere apologies. It has been a mixture of laziness and been overwhelmed in work and life in general. So, I have actually completed the challenge a few weeks ago, but only managed to get to the writing bit now…

My brother and his family and my sister and hers were invited to lunch on Sunday; it seemed like a great opportunity for me to make the challenge.
I had to triple the recipe, because we were eight people to eat.
I got a chance to make the chicken tikka masala recipe the other day for my family and so jumped on the opportunity. I made the dish with no changes from the challenge recipe as this was my first time making it. The flavor was very similar to the one served in the local Indian restaurant here I love so much and surprisingly it was not that difficult to make!
I finally got down to cooking Z’s challenge. I want to apologize to our readers for this delay, but I had some issues to address and blogging was out of the question.
But all’s well that ends well and things are back on track.
I had to start this recipe early in the morning, with coffee, because the chicken was supposed to be marinated.
I would like to apologise to my Taste Buds for taking this long to submit my challenge. There were several reasons for this, but it finally made its way onto the blog! I recently received a recipe book as a gift from my best friend and her fiancé. I was conned, helping to choose the book not knowing that it was for me. I made the perfect choice, choosing my favourite chef, Gordon Ramsay. This challenge is therefore a tribute to my best friend, Eleftheria (Lefty).
This recipe does not appear in the book I chose, but it is one of my favourite dishes! I hope you like it. My Taste Buds should have these spices left over from our breyani escapade.
