My sister makes the best Sablés cookies ever. Sablés are butter based cookies filled with apricot jam (home made in my case). They probably one of the rare things that don’t include chocolate and that I love.
I have been willing to learn to make them for some time now, but her visits were always short because the kids had to go back to school. But with the benefit of the summer vacation she has been paying us a visit since Tuesday and what better than a long visit to learn.
The recipe is quite simple, she does not even use eggs in it like most do. The dough can also be used as a crust for tarts. It is awesome I tell you.
I finally got her recipe and got her to tell me how she makes. I can say I did well, since the batch already disappeared a day after!
Sablés
Ingredients:
- 5 cups flour
- 400g butter softened
- 1 cup powder sugar
Preparation:
- Combine the cup of sugar, 3 cups of flour and the butter. Add the rest of the flour gradually till you obtain a soft dough.
- Spread the dough with the rolling pin till it is about 2 mm thick. Cut the cookies in equal numbers for the top and the bottom.
- Bake them at 180˚C for 15 to 20 min or till bottom slightly golden.
- Fill with apricot jam and join top and bottom. Sprinkle with powder sugar.
And the proof that the cookies were a hit…
